Figs, ginger and honey jam

Still working on those figs?

I love figs and I would eat them all in one bite. Our young tree gave us some sweet little beauties this year – although not enough to make jam.

This is a recipe I tried a couple of months ago, when still in London and I had the chance to buy a few punnets. I must confess not all figs turned out to be very sweet.. However the jam was gorgeous and it’s such a simple and healthy recipe. Try..

Ingredients

600gr figs
200gr honey
1 heaped ts grated ginger

Know-how

Easy peasy chop the figs, grate the ginger and let the honey run, all goes in one pot. Bring to a boil and then let simmer until it reaches the desired consistency. Adjust honey and ginger if needed. Enjoy!
