We understood from my first blog post that I am not a morning person. I am also constantly after novelty and I like change. Therefore, I was looking for a new version of my morning muffins and came up with one that can be customised depending on what seeds and fruit you have in your kitchen (or freezer!).
I particularly like this recipe because it uses old fashioned rolled oats, which give texture and crunch.
Ingredients
3 cups old fashioned rolled oats
1 cup 0% Greek yogurt
A splash of milk
2 eggs
1 ts baking powder
1/4 cup honey
1 ts cinnamon
Know-how
Mix all the ingredients together in a large bowl. This is the time to think about your toppings: dried fruit, nuts, berries, banana, dark chocolate, peanut butter… Be creative and think about all the possible combinations that give you a good start.
Fill up 12 muffin cups, place in a tray and bake in the oven at 180°C for 20′.
