Usually in the morning I have my nice little bowl of porridge with honey, seeds, maybe some fruit. Unfortunately for me though, I am not a morning person so when I feel lazy and I want to have those essential extra ten minutes in bed, I prepare these in advance.
You can taste the sweetness of the figs, the softness of the oats, the crunchiness of the buckwheat and the gojis totally lose their bitterness. They are full of all good vitamins, fibres, minerals and you can pack them in your bag if you –like me- tend to run a little late sometimes.
Feeds 10-12
Ingredients:
200gr porridge oats
100gr buckwheat
250gr dried figs
2 TBSs chia seeds
50gr goji berries
200ml milk (any kind)
Coconut oil for the muffin tray
Know-how:
Remove the stalk from the figs and chop them roughly. In a food processor, combine figs, oats and goji berries until they form a sticky paste. Add the eggs, give it a last spin and transfer into a bowl. Add milk and chia seeds and mix until well combined. Grease your muffin trays with coconut oil and place two spoonfuls of mixture in each section. They will not rise so feel free to add a third spoonful if you wish. Bake in the oven at 180°C for 25-30 mins.
They last up to 4 days in an air-tight container. Happy days.
